Dinner is Served


Ingredients:


4 chicken breasts

2 tablespoons honey

2 tablespoons harissa paste

1 cup basmati rice

2 cups chicken broth

1 Tomatoes on the vine

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil

1/2 cup frozen peas

1/4 cup chopped fresh cilantro (optional)

Method


This dish, which is lightly seasoned with Middle Eastern and North African flavours, is like a taste of summer. If you're not familiar with harrisa paste, you can typically find it in jars at most supermarkets. Keep in mind that it can have a strong kick, so if you prefer more mild tastes, you may want to use less paste!


You're in the mood for a tasty and satisfying dinner? Well, some of you already know that I am a massive foodie and love to cook, and sometimes show off my skills over on my Instagram.


I have appeared alongside Jamie Oliver on two of his shows and take a lot of my inspiration from him, his style, and his passion for cooking.


This is none of my all time favorites meals and I am happy to share it all with you


Harrisa Honey Chicken

(Rice is optional)


Preheat your oven to 400°F (200°C) and gather your ingredients: four chicken breasts, honey, harissa paste, basmati rice, chicken broth, salt, black pepper, olive oil, frozen peas, and some cilantro for garnish.


In a small bowl, you mix the honey and harissa paste to create a spicy-sweet glaze. You place the chicken breasts in a baking dish and brush the tops with the glaze. You pop the dish in the oven and set a timer for 20-25 minutes.


While the chicken is cooking, you bring the chicken broth, salt, and black pepper to a boil in a saucepan. You add the rice and return it to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid has been absorbed.


Meanwhile get your tomatoes on a bakiing tray drizzle in olive oil and whack them in the oven until they are red hot and about to pop!


You stir the frozen peas into the rice and cook for an additional 2-3 minutes, or until the peas are heated through. You divide the rice between four plates and top each with a chicken breast.


You sprinkle some chopped cilantro on top, if you like, and serve the dish hot. The combination of spicy harissa and sweet honey on the tender chicken is delicious, and the rice and peas make a perfect accompaniment.
